About Quayside Sushi

Tie on your apron at Quayside Sushi, the conveyor-belt sushi counter on the Fish Market quay in Sunset Bay's Old Port. Tap the bamboo mat for a sheet of nori and rub the rice on with your finger, leaving the strip at the far edge bare. Lay the fillings along the line, then roll it with one slow, even push of the mat: too fast and it rolls loose. Swipe down across the roll seven times to cut eight equal pieces (every cut is scored for precision, and precise cuts build a knife streak). Press nigiri by hand until the ring turns green and lay the fish on top, wrap hand rolls with a circle, and send every dish round the belt on its coloured plate: green, blue, red and gold, each with its own price and rim pattern. Customers grab what they ordered as it passes their stool, spares on the belt can be snapped up, and the belt speeds up through the lunch and dinner rushes. The menu grows through the week, from cucumber rolls and salmon nigiri to tamago, hand rolls and the dragon roll, and on Fridays a food critic orders three courses and writes a review. Fish you catch in Lure & Lake can become the special of the day. Play Relaxed with no clock, take the Daily, spend your wages on a sharp knife and a bigger board, and keep your stars and badges in the Job Passport. Made for everyone from about six up, with read-aloud, full keyboard play and reduced motion.
